
INGREDIENTS
For the Burritos:
1 lb (450g) boneless, skinless chicken breasts, cut into strips
1 cup cooked rice (white or brown, according to preference)
1 cup cooked black beans, drained and rinsed
1 onion, sliced
2 bell peppers (any color), sliced
4 large flour tortillas
Salt and pepper, to taste
Olive oil
Shredded cheese (cheddar, Monterey Jack, or Mexican blend), for garnish
Chopped fresh cilantro, for garnish
For the Jalapeno Aioli:
1/2 cup mayonnaise
1-2 jalapeno peppers, seeded and minced
1 clove garlic, minced
1 tablespoon lime juice
Salt and pepper, to taste
nstructions:
1. Prepare the Jalapeno Aioli:
- In a small bowl, combine mayonnaise, minced jalapeno peppers, minced garlic, and lime juice.
- Season with salt and pepper to taste.
- Cover and refrigerate until ready to use.
2. Cook the Chicken and Vegetables:
- Heat a tablespoon of olive oil in a large skillet over medium-high heat.
- Season the chicken strips with salt and pepper, then add them to the skillet.
- Cook until the chicken is browned and cooked through, about 5-6 minutes per side.
- Remove the chicken from the skillet and set aside.
- In the same skillet, add a bit more olive oil if needed, then add the sliced onions and bell peppers.
- Saute until the vegetables are tender and slightly caramelized, about 8-10 minutes.
- Stir in the cooked black beans and cooked rice, and cook for an additional 2-3 minutes to heat through.
3. Assemble the Burritos:
- Warm the flour tortillas in a dry skillet or microwave for a few seconds to make them pliable.
- Spoon a portion of the chicken and vegetable mixture onto the center of each tortilla.
- Drizzle some of the jalapeno aioli over the filling.
- Sprinkle with shredded cheese and chopped cilantro, if desired.
- Fold in the sides of the tortilla, then roll it up tightly to form a burrito.
4. Serve:
- Serve the chicken, rice, pepper, onion, and black bean burritos with extra jalapeno aioli on the side for dipping.
- Garnish with additional cilantro, if desired.
