Instructions:

1. Prepare the Garlic Chicken:

  • Preheat your oven to 375°F (190°C).
  • Season the chicken breasts with salt, pepper, and paprika (if using).
  • In a skillet, heat 2 tablespoons of olive oil over medium-high heat.
  • Add minced garlic and sauté for about 1 minute until fragrant.
  • Place the seasoned chicken breasts in the skillet and sear for 3-4 minutes on each side until golden brown.
  • Transfer the skillet to the preheated oven and bake for 15-20 minutes or until the chicken is cooked through (internal temperature of 165°F or 74°C).
  • Remove from oven, garnish with chopped parsley, and set aside.

Ingredients:

For Garlic Chicken:

  • 4 boneless, skinless chicken breasts
  • 4 cloves garlic, minced
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1 teaspoon paprika (optional)
  • 1 tablespoon chopped fresh parsley (for garnish)

For Fried Peppers:

  • 2 bell peppers (any color), sliced into strips
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • 1 teaspoon dried oregano (optional)

Prepare the Fried Peppers:

  1. While the chicken is baking, heat 1 tablespoon of olive oil in another skillet over medium heat.
  2. Add the sliced bell peppers and sauté for 5-7 minutes until they are tender and slightly caramelized.
  3. Season with salt, pepper, and dried oregano (if using).
  4. Remove from heat and keep warm.

For Dill Potatoes:

  • 4 medium potatoes, peeled and cubed
  • 2 tablespoons butter
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1 tablespoon chopped fresh dill
  • Salt and pepper to taste

Prepare the Dill Potatoes:

  1. In a large pot, bring water to a boil and cook the cubed potatoes until they are fork-tender, about 10-12 minutes.
  2. Drain the potatoes and set aside.
  3. In a skillet, melt the butter with 1 tablespoon of olive oil over medium heat.
  4. Add minced garlic and sauté for about 1 minute until fragrant.
  5. Add the boiled potatoes to the skillet and toss to coat them evenly with the garlic butter mixture.
  6. Season with salt, pepper, and chopped fresh dill.
  7. Sauté for an additional 3-4 minutes until the potatoes are lightly browned and crispy on the outside.

Serve:

  1. Arrange the garlic chicken breasts on a serving platter.
  2. Serve with the fried peppers and dill potatoes on the side.
  3. Garnish with additional chopped parsley or dill if desired.
